Use this guide to decode our offerings, master the terms, and find your perfect daily brew.
1. Choose Your Roast Level
The roast profile fundamentally transforms how a coffee bean tastes and behaves. As beans transition from light to dark, their intrinsic origin characteristics give way to richer, roasted flavors.
Light Roast:** Roasted just until the "first crack" of the bean. These beans are light brown, dry, and packed with crisp acidity. You will taste distinct floral, citrus, and bright berry notes unique to the specific farm and soil.
Best for: Pour-over, drip, and Aeropress.
Medium Roast: A crowd-pleasing sweet spot. The sugars in the bean have begun to caramelize, resulting in a deeper brown color, a rounded body, and balanced acidity. Look for comforting tasting notes like milk chocolate, brown sugar, and toasted nuts.
Best for: Highly versatile; excellent for Cafetiere (French press), stovetop, or traditional drip.
Dark Roast: Roasted until the natural oils rise to the surface, leaving the beans shiny and deep black. The original origin flavors are replaced by bold, heavy-bodied, and smoky characteristics. Expect dark cocoa, molasses, and a heavy, smooth mouthfeel.
Best for: Traditional espresso, intense French press, or anyone who takes their coffee with milk or cream.
2. Decode the Processing Methods
Before the bean is roasted, it must be extracted from the coffee cherry fruit. The method used leaves a permanent blueprint on the flavor profile and body of your cup.
Washed (Wet) The fruit skin and pulp are completely stripped off with water before the bean dries.
Clean & Crisp: Highly defined, precise flavors with a bright, clean acidity. Truly highlights the natural soil and climate of the origin. |
Natural (Dry) The entire coffee cherry dries intact in the sun, letting the bean absorb all the fruit sugars.
Fruity & Vibrant: Heavy-bodied, juicy cups with intense, complex notes of strawberry, blueberry, or tropical fruit.
Honey / Pulped Natural The outer skin is removed, but a sticky layer of fruit flesh is left on during drying.
Sweet & Syrupy: The ultimate middle ground. Noticeably low acidity with an enhanced, syrupy sweetness reminiscent of brown sugar.
3. The Roast-to-Order Rule: The "Resting" Window
Because your beans arrive incredibly fresh, they need a short nap before you brew them.
During the roasting process, gases (primarily carbon dioxide) become trapped inside the cellular walls of the bean.
If you brew them immediately, this escaping gas creates tiny bubbles that push hot water away from the coffee grounds. This causes uneven extraction, resulting in a thin, sour cup.
The Freshness Window:
For Filter & Pour-Over: Let your whole beans rest for 4 to 7 days from the "Roast Date" stamped on your bag before opening.
For Espresso: 7 to 14 days** from the roast date. This resting window is critical for a smooth, predictable extraction and a thick, rich crema.
4. Storage & Sundries
To protect your beans and keep those fresh aromatics locked in, follow these absolute rules:
Airtight & Cool: Store your beans in a cool, dark cupboard inside an airtight canister or our resealable, valved bags. Keep them away from ovens or direct sunlight.
No Refrigerator: Never put your coffee in the fridge. Moving it in and out creates condensation inside the bag, which moisture-damages the delicate flavor oils.
